Back to school with the Cook School


Darren recently visited the Cook School at Braehead foods in Kilmarnock. The days course was being taught by chef Jaqueline O’Donnell from The Sisters Restaurants in Glasgow and involved 3 dishes that would be demonstrated followed by actually preparing and cooking them in the Cook School’s amazing kitchen..

He also got to take home the recipes.

This was followed by sitting in their dining room and enjoying the meal.

Here is the starter and main course he made on the day:

Of course we were all excited to try these dishes (note there was no photo of the dessert, eaten before he could lift the camera apparently..) so we arranged for my Mum and Dad to come for dinner the following week.

Darren ordered the pork cheeks and fillet from our favourite butchers Houston’s and on Friday morning picked it up along with the fresh fruit and veg from Kilnford farm shop.

The pressure was on, he had been harping on about the food at the Cook School all week and was now cooking for his in-laws…

Well…… we all enjoyed it! I’ll leave you to judge his presentation skills but the food tasted amazing. And the dessert? Rhubarb in orange syrup with home made rice pudding… although he ran out of time for the rice pudding and used vanilla ice cream instead but we’ll let him off on that one.

Would he go again? I think he’s already booked his next course!

OK, he was told to wear gloves when peeling the beetroot.

Rapeseed oil came recommended by Chef Jaqueline.

Time to eat, Goats cheese with beetroot and fried rocket,

Followed by pork cheeks and pork fillet with ginger and honey carrots.

Ah, one more thing. At the cook school the washing up fairies took care of this…

And to finish, Darren was nearly in tears when he broke one of his beloved Riedel glasses doing the washing up.
